Try these meatless meatballs the next time you need a meatless meal!
Pre-heat oven to 425 degrees.
Slice eggplant into 1/4 “ thick slices. Spray or brush slices with olive oil.
Roast slices in oven for 20-25 minutes.
When soft, remove eggplant from oven and allow to cool.
Put eggplant and all remaining ingredients into the food processor.
Use a spoon or small ice cream scoop to form into balls.
Place formed meatballs on cookie sheet that has been sprayed with non-stick, cooking spray.
Bake at 425 degrees for about 20 minutes.
Serving suggestion: Top with tomato sauce and shredded mozzarella cheese or in a pita with fresh veggies and tahini or tzatziki sauce.
